Honey-Pies BBQ To Open at Former Bubba’s Site With Texas-Style Meats

Alison Council will launch Honey-Pies BBQ & SmokeHouse as soon as March. The restaurant takes over what used to be Bubba’s Barbecue on Sunset Road in North Charlotte.

Alison Council will launch Honey-Pies BBQ & SmokeHouse as soon as March. The restaurant takes over what used to be Bubba's Barbecue on Sunset Road in North Charlotte. She bought the property at 4400 Sunset Road, and Eastern Carolina barbecue will give way to Texas-style smoked meats.

"It couldn't have been a more perfect match," Council said, per the Charlotte Observer.

Council runs Queen City Meats & Butcher Shop and Brookshire Commissary Kitchen. Both will move to the site. She'll add a seafood market on adjacent property that came with the purchase.

Brisket leads the menu. Dino ribs follow. Texas-style barbecue anchors the offerings. Brunswick stew shows up too, along with fried chicken and smoked chicken.

"Everything's big in Texas," she said. "I'm bringing Texas to Charlotte."

Sides lean Southern — potato casseroles, macaroni, stewed squash, steamed cabbage. Then comes creamed corn and fried okra, while honey cornbread completes the spread.

Each meal starts from scratch using fresh vegetables and locally-sourced meats cut at her butcher shop. Council named the restaurant after her grandmother and mother.

"You're going to have the old school barbecue feel, but on the upscale. The type of food that you really can eat — that you grew up on," said Council.

Keeping prices down matters to her because families need affordable options. "I'm about the old school Southern cooking, where you can eat one meal at lunch and still maybe we have enough left over to eat another meal," she added. "Pile 'em ups is what I call them. You're going to get more than enough to feed the family without breaking the bank."
