At Camp North End, Gravity Pizza fired up its ovens in July 2024. Their wood-burning stoves turn out crisp, tangy crusts that make standard pizza dough seem bland.
A small cottage in Waxhaw houses Virtuoso Breadworks, which started serving customers in March 2025. Their cheese rangoon focaccia stands out as a must-try item. The tiny shop aims to turn into a local gathering spot.
While some push boundaries, Verdant Bread keeps its roots in traditional methods. Still, their test kitchen mixes up fresh takes on old recipes.
"We definitely didn't come up with sourdough bread ... We are just jumping on a trend that's [thousands] of years old," a baker said, according to The Charlotte Observer.
South End welcomed Wheelz Pizza in May 2023. This Wilmington transplant pairs organic sauce with their tangy crust, winning over local pizza fans.
Not to be left behind, Milkbread took sourdough in a new direction: bagels. Their success shows how this ancient starter can work wonders in skilled hands.
Each Charlotte baker adds their spin to sourdough. Some craft poutine danishes, while others stuff bagel bombs with surprising fillings. The mix of old and new keeps customers coming back.
