A new chapter starts for Mariah's Taco Spot as it moves into a fixed location at 4100 Raleigh St. in Charlotte's NoDa district. The small but welcoming space will seat 32 guests when it opens in late October.

Owner Mariah Brown told Business Debut, "From the apartment, I opened up a ghost kitchen, and then from the ghost kitchen, we expanded to the food truck. Our intentions are to keep opening up more locations."

Building on their street food success, the menu will grow past their well-known tacos and wings. New additions include crispy loaded nachos topped with fresh ingredients, sweet strawberry-dusted churros, and warm cookies straight from the oven. Guests can sip on craft margaritas, pick from various tequilas, or grab an ice-cold beer at the full bar.

Doors will stay open six days a week. Music will fill the air as local DJs take turns at the turntables. The well-known food truck won't stop: it'll keep serving at its usual spots across town.

The story began in 2020 amid lockdowns. Brown started small, making tacos in her two-bedroom flat. Soon, the kitchen grew too small, leading to a ghost kitchen setup before taking to the streets.

"I highly encourage people to start where they are," Brown said. "Our ghost kitchen route was cost-effective and helped us establish our business and brand before going bigger."
