At 25 Optical Court NW in Concord, owners John and Lillian Brijeski cut the ribbon on their first shop. "It's meant a lot to be able to put something down and say it's ours," John said per Yahoo News.
Coming this fall, a new 1,200-square-foot shop will start serving treats at 3021 Stelfox St. The spot sits near Trader Joe's in Charlotte's University area, right off West Mallard Creek Road.
After the University shop opens its doors, four more will follow. The owners want to spread north, with their sights set on spots in Huntersville. They're also checking out spaces in Cornelius and Mooresville.
Each morning, bakers mix and shape the dough by hand. Along with classic treats, they make kolaches, soft pastries stuffed with tasty fillings. While new to North Carolina, these shops have already won fans across other states.
